This is the dried leaf of Old Man Saltbush – Atriplex nummularia.

Saltbush has a naturally salty flavour, with a somewhat bitter aftertaste. Excellent for cutting through rich, oily savoury dishes, and is a surprisingly good pairing with white chocolate.

Use saltbush:

  • In savoury cooking with any meat, green veggies, or sprinkled over salads.
  • It's a particularly good pairing with rich or gamey meats such as lamb, kangaroo, possum, or crocodile.
  • Mixed into butter or warm oil and melted over vegetables.
  • Whole leaves can be fried and used as a crispy garnish.
