Wattleseed is the dried and roasted seeds of edible Acacia species.

We are currently trialling a range of different edible Wattleseeds to enable the most consistent supply.

Whole seed orders will generally be of a single variety.

Ground seed orders will generally contain a blend.

Please contact us to confirm varieties before placing your order. We endeavour to keep the shop up-to-date, but Life can sometimes get in the way.

Current whole seed

We are currently offering A. saligna (also known as coojong, golden wreath wattle, orange wattle, blue-leafed wattle, Western Australian golden wattle) as our bulk whole seed variety.

While in this trial period, we can only guarantee 3kg of the one variety of any given time. Please contact us if you need higher quantities than this in a single order.

Current ground blend

In order of proportion:

  • A. saligna (coojong, golden wreath wattle, orange wattle, blue-leafed wattle, Western Australian golden wattle)
  • A. victoriae (Elegant Wattle, Prickly Wattle, Gundabluie/Gundabluey)
  • A. coriacea (river jam, wirewood, desert oak, wiry wattle, dogwood)
  • A. provincialis (Wirilda, Wirrildar, Swamp Wattle, Water Wattle, Perennial Wattle)
  • A. baileyana (Cootamundra wattle)
  • A. longifolia (long-leaved wattle, acacia trinervis, aroma doble, golden wattle, coast wattle, sallow wattle, Sydney golden wattle)

We may not be able to supply large quantities of all these varieties as whole roasted seeds. Please contact us if you're looking for a particular species or flavour profile.

Flavour profile

When roasted, wattleseed in general has a round coffee/chocolate/hazelnut flavour, suitable for using in sweet and savoury dishes.

Use wattleseed:

  • In baking. It is superb in breads, dampers, rolls, etc.
  • In sweet cooking, where it will add a lovely warm nutty round flavour – biscuits, cakes, icecream, sorbets, etc.
  • In rubs, bastes, marinades, and salad dressings.
  • As a hot drink in its own right, or added to coffee/chocolate in a plunger or espresso machine. Wattleseed contains no caffeine.
  • It is soluble in water, although it doesn’t dissolve, and adds a rich brown colour to cooking.
