This is the dried leaf of Old Man Saltbush – Atriplex nummularia.
Saltbush has a naturally salty flavour, with a somewhat bitter aftertaste. Excellent for cutting through rich, oily savoury dishes, and is a surprisingly good pairing with white chocolate.
Use saltbush:
In savoury cooking with any meat, green veggies, or sprinkled over salads.
It's a particularly good pairing with rich or gamey meats such as lamb, kangaroo, possum, or crocodile.
Mixed into butter or warm oil and melted over vegetables.
Whole leaves (when available) can be fried and used as a crispy garnish.
