This is the dried leaf of Old Man Saltbush – Atriplex nummularia.
Saltbush has a naturally salty flavour, with a somewhat bitter aftertaste. Excellent for cutting through rich, oily savoury dishes, and is a surprisingly good pairing with white chocolate.
Use saltbush:
- In savoury cooking with any meat, green veggies, or sprinkled over salads.
- It's a particularly good pairing with rich or gamey meats such as lamb, kangaroo, possum, or crocodile.
- Mixed into butter or warm oil and melted over vegetables.
- Whole leaves can be fried and used as a crispy garnish.
